Ingredients
1 cup Walnuts
2 tbsp coconut oil (+ for greasing)
3-4 small really ripe bananas
1 cup Almond meal
2 eggs
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon

Food process walnuts until a fine meal. Add 2 tbsp of coconut oil & microwave for 30 seconds. Mix well in stand mixer (or with hand mixer). Add bananas and mix until totally combined. Add almond meal & eggs. Mix for a few minutes then add remaining ingredients and mix on high speed until it is a batter.

Grease muffin tin w/ coconut oil. Bake at 375° 12 minutes or until totally done. Let cool before removing from tin. Enjoy!
