Flan, fabulous flan

As of right now, my cooking claim to fame is flan. It is seriously the only thing I can bake from scratch that doesn’t involve a microwave. The original recipe I use is from this website. I’ve tweaked the measurements a bit and the only other thing that’s a little off is the prep and bake time. It usually takes about 30 minutes to get the sugar caramelized well and the bake time I’ve found is anywhere between an hour and an hour and a half.
1 1/2 cup sugar
6 large eggs
1 14 oz. can of sweetened condensed milk
2 12 oz. cans of evaporated milk
2 tsp of vanilla extract
follow the directions on the linkie and enjoy a good birthday flan. Or Christmas flan. Or New Year’s flan. Or Tuesday flan. Whatever the occasion, flan is the greatest, no matter what my brother-in-law Dan says.

Line your dish of choice with the sugar

Don’t forget to recycle 🙂
or to throw your trash out
Whisk, whisk, whisk.

fill your pan

and bake at 375 F for an hour and fifteen minutes

Insert a knife all the way to the bottom in the center and if it comes out clean, it’s done!

Let it sit in the fridge for several hours (otherwise it’ll collapse. I learned from experience) and then invert it on whatever serving dish you like and the caramel will flow.
